This year, Vin Côté Cours will meet you on Thursday May 29 (Ascension Day) in the enchanting setting of the village of La Capelle-et-Masmolène!
For this edition, starred chef Matthieu Hervé, at the helm of the gourmet restaurant Le Cèdre de Montcaud* in Sabran, has imagined an exclusive menu, combining creativity and refinement.
At each stop, a new harmony is created between exceptional dishes and Duché d’Uzès appellation wines, for a perfect pairing that will delight your taste buds. A culinary and oenological experience to savor while exploring the timeless charm of La Capelle-et-Masmolène: its picturesque streets, its gardens and its rich wine and historical heritage. - What is Vin Côté Cours?
Vin Côté Cours is a gourmet food and wine walk, an event to celebrate the products of Duché d’Uzès. The route is 5-6km long, with a stop made after every kilometre to enjoy a different dish, from appetiser to dessert, paired with a selection of 3-5 wines chosen by our winemakers. Stops are made in the area’s most iconic locations, linked either to local heritage or wine production. Duché d’Uzès Appellation winemakers will be on hand throughout to share their expertise and explain which wines make the best pairings with which foods.
To ensure things go as smoothly as possible, participants will be divided into small groups, one group leaving every 15 minutes from 10.15am to 1.15pm.
- The Chef, Matthieu HERVE
Chef of the Château de Montcaud kitchens since 2018, Matthieu Hervé subtly blends Nordic freshness with the sunny flavors of Provence. His talent earned Bistro de Montcaud a Gault & Millau toque (2023), while the gourmet restaurant Le Cèdre de Montcaud was awarded two toques (2023) and a Michelin star (2024).
Originally from Normandy, he cultivates a passion for seafood, which he carefully selects thanks to its proximity to the coast.
Trained with the greatest starred chefs, he refined his art alongside Peter Knogl, perfecting his mastery of sauces and gravies. His style is distinguished by a perfect highlighting of the products, enhanced by a touch of the unexpected, without artifice or pretension.
To give free rein to creativity, a culinary laboratory has been set up in the castle’s former dovecote. A place of experimentation where the flavors of tomorrow are born.
